I mean really. Throwbacks to 8th grade AND painfully new-popular bands all together? Best emotional music-rollercoaster possible.
Anywho I made some effort to halve this recipe and follow it, but it was more like:
Ingredients
U.S. Metric Conversion chart
- 1 1/4 cup & 1 tsp. flour
- 1/2 tbsp. baking powder
- 1/4 tsp. salt
- 1 cup milk (I had lowfat)
- 1/4 cup light cream
- 1/2-1/3 tbsp. vanilla extract
- 1/2 cup margarine or shortening, softened
- 2 1/2 tbsp. olive oil
- 1 1/4 cups brown sugar
- 2 large eggs (I used xl)
- (optional spot for whatever you fancy. I fancied a dash of cinnamon, a splash of lemon juice, and a heaping handful of dried cranberries)
- Preheat oven to 350ºF. Realize that you take too long to do things and turn it back off.
- Grease one 9-inch round cake pan. Dust with flour.
- In medium bowl, stir together sifted flour, baking powder and salt (and cinnamon/other powdered add-ons!).
- In measuring cup, mix milk, cream and vanilla. Actually, do this after the sugar and butter are already measured because otherwise you’re kinda SOL, or at least have wet sugar.
- In large bowl, with a spoon or fork or spatula or whatever seems like a good idea at the time, attempt to beat butter and sugar until creamy. Realize nothing’s happening because you didn’t soften the margarine. Luckily, you have a burning hot oven handy! Soften brown sugar and butter until they agree to mix together (1-5 minutes depending on heat).
- Add eggs, one at a time, beating well after each addition. Add oil as well; this should help with any flour balls that try to form in the next step.
- Slowly add flour mixture alternately with milk mixture, beginning and ending with the flour mixture. Beat just until smooth.
- Add any other custom ingredients, and pour batter evenly into pan. Bake until toothpick inserted in center of cake comes out clean, 35 to 40 minutes. Cool for 10 minutes. Invert cakes onto racks; remove paper and let cool completely.

oh my god so moist, this cake. almost custardy. I’m gonna let it cook a bit more but it’s delish!
